RECIPE
INGREDIENTS:
Salt
1 lb. pasta shells
1 tsp. Olive oil
1 stick unsalted butter
5 tbsp. All-purpose flour
5 cups whole milk
3 cups cheddar cheese
3 cups Swiss cheese
16 slices American cheese
Black pepper
¾ tsp. Cayenne pepper
Bread crumbs

INSTRUCTIONS:
Preheat oven to 425F
A large pot of salted boiling water
Cook pasta 1 min less than the cooking instructions on the pkg
Drain, rinse, and toss with olive oil
Grease a baking dish with pam or butter
Large pot:
Heat 1 stick of butter over med-high heat until melted but not browning
Add flour and cook while constantly stirring (roux) until its light brown (about 4-5min)
Gradually add milk while whisking, and bring to boil
Reduce heat to medium and cook, whisking until it thickens, about 4-5 min.
Add cheese, a few slices at a time, saving some cheese for the top, and stir until smooth
Whisk in 2 tsp. Of salt, ¼ tsp. Of black pepper and cayenne pepper.
Stir in the cooked pasta in the pot, season to taste with spices, and cook until pasta is hot again
Pour the mixture into the baking dish
Top with remaining cheese and spread the bread crumbs evenly over the top.
Bake until topping is brown and crisp, about 8 min
Broil until crispy
